Banana Oatmeal Muffins


I’ve been itching to cook or bake these past few days, and today I finally did with the bananas that have been ripening away in the house. What’s more perfect than overripe bananas in a muffin!

Ever since I was a kid, I’ve always loved banana muffins. Whenever my mom or dad would bring me to Chinatown, I would always visit this one store that sells really good banana muffins. I used to crave for it until I learned that it’s very easy to make! I think this was one of the very first things I made, and through the years I’ve learned to add in other ingredients such as nuts and oats.

Since i’m trying to eat healthy (note on the TRYING!), I added some oats to what was once an ordinary banana mufifn recipe. And it turned out great! Not only did it have more body and crunch, it has more nutrients too!

Recipe:
1 1/2 cup APF
1 tsp baking powder
1 tsp baking soda
1/2 tsp salt
3/4 tsp cinnamon
3 large bananas, mashed
3/4 cup brown sugar
1 egg
1/3 cup butter, melted
1 tsp vanilla
1 cup oats

1. Preheat the oven to 175C.
2. In a bowl, sift APF, baking powder, baking soda, and salt.
3. In a separate bowl, cream together butter and sugar. Add in the egg then the vanilla.
4. Stir in the mashed banana into the wet mixture. Then slowly stir in the dry mixture.
5. Add in the oats and transfer into muffin pan.
6. Bake for 20 minutes. Serve after cooling.
